Visit to an Idiazabal cheese farm
Description
Although Idiazabal did not obtain its Denomination of Origin until October 1987, the history of this unique cheese in the world goes back thousands of years. It is one of the most famous cheeses in Spain and is made in Álava, Vizcaya, Guipúzcoa and Navarra. Its origins lie in nature, in the green landscapes of the Basque Country. The same environment in which, with little variation over more than eight thousand years, Basque shepherds have raised the Latxa and Carranzana sheep, native breeds with peculiar characteristics whose raw milk is used to make this unique and highly prized cheese. A cheese of recognised value, declared a European Gastronomic Heritage, whose flavour will not leave anyone who considers themselves a true cheese lover indifferent.
What we are going to do?
We will learn how Idiazabal cheese is produced with a guided visit to an authentic cheese factory in the Basque Country. We will depart from San Sebastian in a private organised transport, accompanied by a local guide and in a small group. We will have the privilege of tasting several award-winning cheeses and enjoy half a day in a unique environment, where we will not only learn all about cheese production, but also fall in love with the views and the amazing landscapes full of mountains and forests.
